## About this wine

Cúmaro Conero Riserva DOCG is a 100% Montepulciano red wine from the Conero sub-region of Marche, Italy, produced by Umani Ronchi. The wine's name is derived from the local term for 'arbutus,' an evergreen shrub, and is a tribute to Mount Conero. Established in the mid-1980s, Cúmaro was created to highlight the potential of Montepulciano from this specific terroir. It was one of the pioneering wines to receive the Conero Riserva DOCG classification in 2004. Umani Ronchi, founded in 1957, is managed by the Bernetti family, who are dedicated to organic viticulture and expressing the distinctiveness of their vineyard sites.

## Food pairing

The wine's full body and firm tannins are well-suited to complement the richness and protein of red meats, while its medium-plus to high acidity can cut through fatty elements. The wine's inherent fruit notes can harmonize with savory dishes and certain sauces.

## Wine making process

The winemaking process for Cúmaro Conero Riserva begins with a manual harvest. The grapes are destemmed and lightly crushed before undergoing fermentation in stainless steel tanks at controlled temperatures (27-29°C) for 12-14 days, using natural yeasts. Malolactic fermentation is then completed. The wine is aged for 12-14 months in 225-liter French oak barriques, followed by an additional 6-8 months of bottle aging in a temperature-controlled environment.
