## About this wine

The Cuvée Augusto Lessini Durello Riserva Metodo Classico 2017 is a sparkling white wine from Dal Cero's Tenuta Corte Giacobbe estate in the Veneto region of Italy. It is made exclusively from the Durella grape, grown in the volcanic soils of the Lessini hills. The wine is named in honor of the winery's founder, Augusto Dal Cero, and represents the Dal Cero family's multi-generational commitment to winemaking, blending tradition with contemporary approaches. The estate itself was established in 1934.

## Interesting facts

- Made from 100% Durella, a grape native to the Lessini hills.
- Aged on its lees for a minimum of 50 months, developing complexity.
- Grown on the slopes of extinct volcanoes.
- Dedicated to the winery's founder, Augusto Dal Cero.

## Food pairing

The wine's high acidity and minerality cut through rich or fatty elements in dishes, cleansing the palate. Its complexity and extended lees aging make it a versatile companion for delicate seafood, poultry, and aged cheeses.

## Wine making process

The Cuvée Augusto Lessini Durello Riserva Metodo Classico is produced using the traditional method (Metodo Classico). The Durella grapes are hand-harvested and whole clusters are pressed. The initial fermentation takes place in oak barrels, specifically Austrian oak and French barriques, at controlled temperatures. A second fermentation occurs in the bottle, followed by a minimum of 50 months of aging on lees. After disgorging, the wine rests for an additional 6 months.
