## About this wine

Champagne Pierre Péters is a legendary grower-producer (Récoltant-Manipulant) located in the heart of the Côte des Blancs in Le Mesnil-sur-Oger. The estate has been family-run for six generations, farming some of the most coveted Chardonnay vineyards in the region. The 'Les Chétillons' bottling is their flagship cuvée, sourced from a single, world-renowned lieu-dit. Widely regarded by critics as the 'Le Montrachet of Champagne,' this site is celebrated for producing wines of unparalleled precision, intense chalky minerality, and extraordinary longevity. The 2015 vintage showcases a slightly warmer, more generous expression of this iconic terroir while retaining its signature crystalline structure.

## Interesting facts

- Sourced from three distinct parcels within the legendary Les Chétillons lieu-dit, with the oldest vines planted back in 1936.
- The estate practices massal selection (sélection massale) to propagate their historic, low-yielding Chardonnay clones.
- Often referred to by critics as the 'Le Montrachet of Champagne' due to its incredible depth, power, and chalky minerality.

## Food pairing

The high acidity and intense chalky minerality of this Blanc de Blancs cut through rich, fatty textures like butter, cream, and pork belly, while its autolytic complexity beautifully complements delicate seafood, umami-rich aged cheeses, and saline shellfish.

## Wine making process

This Champagne is crafted exclusively from 100% Chardonnay sourced from three distinct, old-vine parcels within the Les Chétillons lieu-dit, with vines averaging 50 years of age. The grapes are hand-harvested and gently pressed. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the purity of the fruit and the distinct chalky terroir. Malolactic fermentation is fully completed to balance the high natural acidity. The wine undergoes secondary fermentation in the bottle and is aged on its lees for over six years in the estate's chalk cellars before disgorgement. It is finished with a low dosage of approximately 5 grams per liter (Brut).
