## About this wine

Damien Guadagnolo is a former European professional boxing champion who turned to winemaking, spending seven years working under the renowned Jura natural producer Jean-François Ganevat. To offset severe frost and hail crop losses in Jura, Damien created this négoce cuvée by sourcing organically grown Gamay from partner vineyards in Beaujolais and transporting the fruit to his cellar in Orbagna, Sud-Revermont. Vinified with Jura infusion techniques, this cuvée offers a captivating synthesis of Beaujolais fruit and Jura natural winemaking philosophy.

## Food pairing

The wine's crisp acidity, fine-grained tannins, and vibrant berry notes make it exceptionally versatile with food. It pairs seamlessly with roasted poultry, earthy mushroom dishes, charcuterie, and medium-aged cheeses without overwhelming delicate flavors.

## Wine making process

Hand-harvested in small crates from certified organic vineyards, the Gamay grapes undergo spontaneous fermentation with native yeasts in stainless steel tanks using 100% whole-cluster carbonic maceration. The juice undergoes gentle basket pressing and is aged in seasoned, neutral Burgundy oak barriques to permit subtle oxygenation without imparting heavy oak flavors. Bottled unfiltered, unfined, and with zero added sulfur dioxide.
