## About this wine

Les Vignes d'Olivier is a natural winery founded by Olivier Cohen in Argelliers, within the Languedoc region of France. After gaining experience at renowned natural wine bars in Nice and apprenticing under legendary natural vignerons across France, Cohen established his estate in 2013. Following a severe frost in 2017, he introduced the collaborative Déferlante line, partnering with trusted local organic growers to create high-energy, skin-contact white and natural cuvées.

## Interesting facts

- Winemaker Olivier Cohen trained under natural wine icons like Thierry Allemand and Antoine Arena.
- Vineyard cover crops are eco-managed naturally using a grazing flock of sheep.
- The Déferlante range was created after a severe frost wiped out much of the 2017 estate harvest.

## Food pairing

Skin-contact orange wines bridge the gap between white and red wines. They offer light tannic structure, crisp acidity, and rich aromatics, making them exceptionally versatile with savory white meats, rich charcuterie, mild spices, and complex vegetable dishes.

## Wine making process

Grapes are harvested manually from organically farmed clay and limestone vineyards in Argelliers. The winemaking involves six days of whole-cluster skin maceration, followed by spontaneous fermentation with native yeasts. Aging takes place in large traditional wooden Beaujolais tuns (foudres). The wine is bottled unfined and unfiltered, with zero added sulfur dioxide.
