## About this wine

Les Vignes d'Olivier is led by winemaker Olivier Cohen, who established the estate in Argelliers, Languedoc, in 2014 after training with renowned natural winemakers such as Thierry Allemand and Antoine Arena. The Déferlante range was conceived to offer high drinkability and energetic freshness, utilizing organically and biodynamically farmed vineyards near Terrasses du Larzac. Blending red grapes with aromatic white varieties, this cuvée captures the vibrant momentum and mineral terroir of clay-limestone soils in the Languedoc.

## Interesting facts

- 'Déferlante' translates to 'a breaking wave,' reflecting the wine's unstoppable drinkability and energy.
- Winemaker Olivier Cohen originally studied law in Nice before turning to natural viticulture.
- He trained directly under legendary natural winemakers including Thierry Allemand in Cornas.

## Food pairing

This light-to-medium red wine features crisp acidity, soft tannins, and juicy red fruit profiles, making it ideal alongside light meats, earthy mushrooms, and delicate soft cheeses without overpowering them.

## Wine making process

Crafted using 100% natural winemaking with indigenous yeasts, the 2023 vintage combines whole-bunch semi-carbonic co-maceration of red varieties alongside direct-pressed aromatic grapes for five days. Fermentation and aging take place exclusively in inert tanks to preserve intense fruit purity without any oak influence. The wine is bottled unfiltered and unfined with minimal added sulfites.
