## About this wine

Delmoro Tinto is a red wine from the Valencia D.O. in Spain, produced by La Comarcal Viticultores. The wine is made primarily from Garnacha and Syrah grapes, with the blend varying by vintage. The grapes are sourced from old mountain vineyards in Venta del Moro, cultivated using certified organic and regenerative farming practices. La Comarcal is a project by winemakers Javi Revert and Victor Marqués, focused on expressing the unique character of Valencia's indigenous varieties and its high-altitude terroirs. The project aims to bottle the essence of the region through sustainable viticulture and minimal intervention winemaking.

## Interesting facts

- La Comarcal means 'The District' in Spanish.
- Grapes are grown using certified organic and regenerative farming.
- Native yeasts are used for fermentation.
- Vineyards are situated at 600 meters altitude.

## Food pairing

The wine's medium body and fine tannins complement the protein in red meats and game, while its bright fruit notes can stand up to richer sauces. The refreshing acidity cuts through fattier dishes, and any subtle herbal notes in the wine can echo herbs used in the cooking.

## Wine making process

Delmoro Tinto is produced using grapes from high-altitude vineyards. The Garnacha and Syrah are fermented separately in stainless steel tanks, with native yeasts and a portion of whole clusters utilized. The wine undergoes malolactic fermentation. Post-fermentation, it is aged for eight months, with Garnacha in stainless steel and Syrah in concrete tanks, avoiding oak influence. The winemaking philosophy emphasizes organic and regenerative farming, minimal intervention, and the expression of the unique Valencian terroir and indigenous grape varieties.
