## About this wine

Di Fatto Monferrato Rosso is an authentic expression of the Monferrato hills from Azienda Agricola Tacchino, located in Castelletto d'Orba, Piedmont. Founded in 1956, the estate is managed by third-generation siblings Alessio and Romina Tacchino together with their father Luigi. The estate encompasses 25 hectares arranged in a natural amphitheater that protects the vines from cold northern winds. 'Di Fatto' translates to 'In fact,' celebrating local Piedmontese heritage blended with Cabernet Sauvignon, which is notably the only international variety cultivated on the property.

## Interesting facts

- 'Di Fatto' translates to 'In fact' or 'As a matter of fact' in Italian.

- The 25-hectare estate forms a natural amphitheater protecting vines from cold winds.

## Food pairing

The rich body, elevated alcohol (15.0%), firm tannins, and lively acidity of this blend require heartier dishes featuring abundant fat and protein, such as grilled red meats, game, and savory pasta ragùs. These foods soften the tannic structure and balance the wine's robust intensity.

## Wine making process

Grapes are hand-harvested into small 20 kg crates from south-east facing vineyards planted in calcareous clay soil at 250-300 meters elevation. Following gentle pressing, spontaneous fermentation occurs at controlled temperatures of 28°C in stainless steel tanks, where full malolactic fermentation also takes place. The wine ages in 500-liter French oak tonneaux (approximately 20% new oak) before undergoing bottle refinement.
