## About this wine

Located in the historic village of Cramant, Champagne Diebolt-Vallois represents the union of two long-standing winemaking families with roots dating back centuries in the Côte des Blancs. Founded in 1978 by Jacques Diebolt and Nadia Vallois, the estate is now run alongside their children Arnaud and Isabelle. Celebrated for crafting pure, chiselled, and mineral-driven Blanc de Blancs, the house draws from premier and grand cru vineyards in Chouilly and Cuis. The 2019 vintage reflects a warm, sunny year, bringing ripe concentration balanced by chalky freshness.

## Interesting facts

- Combines two winemaking dynasties: the Diebolt family in Cramant and the Vallois family in Cuis since the 15th century.
- Aged for 5 full years on lees in deep chalk cellars prior to disgorgement.
- Sourced from pure chalk soils in Chouilly Grand Cru and Cuis Premier Cru vineyards.
- Extremely limited release, with approximately 7,700 bottles produced in the 2019 vintage.

## Food pairing

The crisp, high acidity and minimal dosage of Extra Brut Blanc de Blancs contrast beautifully with rich, buttery seafood and aged hard cheeses, while delicate fish and raw shellfish mirror the pure, mineral-driven backbone without overwhelming the champagne's elegance.

## Wine making process

Crafted exclusively from 100% Chardonnay grown on pure chalk soils in Chouilly Grand Cru and Cuis Premier Cru. Harvesting is conducted manually, followed by fermentation in temperature-controlled stainless steel vats to preserve fresh fruit purity and aromatic precision. After bottling for tirage in early 2020, the wine aged on its lees in deep underground chalk cellars for five years before disgorgement. It was finished with a minimalist Extra Brut dosage of 3 g/L.
