## About this wine

Filipa Pato and her husband, Belgian master sommelier William Wouters, craft authentic wines in Bairrada, Portugal. Dedicated exclusively to indigenous grape varieties and biodynamic viticulture, their guiding philosophy—'authentic wines without makeup'—celebrates pure coastal terroir expression. The Dinâmica range represents an energetic blend designed to showcase the synergy between Bical and Arinto harvested from midslope calcareous clay vineyards located just 15 kilometers from the Atlantic Ocean.

## Interesting facts

- Filipa Pato was voted Winemaker of the Year in Portugal in 2020, becoming the first woman in 30 years to win the award.
- She is the daughter of Luís Pato, the famed winemaking pioneer who revolutionized Bairrada wines.
- The vineyards are farmed biodynamically under Demeter certification standards near the Atlantic coast.

## Food pairing

The vibrant natural acidity and coastal salinity cut seamlessly through creaminess in soft goat cheese and delicate fats in pork or fish, while complementing citrus-driven seafood and fresh herbal dishes.

## Wine making process

Grapes are handpicked in whole clusters, with Bical harvested early for freshness and Arinto picked weeks later. After gentle pressing and static settling, fermentation occurs spontaneously with native yeasts (90% in stainless steel tanks and 10% in neutral 500-600L French oak casks). The wine matures on fine lees without bâtonnage for 5–8 months, undergoing natural winter cold stabilization before blending and bottling.
