## About this wine

Fossil & Fawn was founded by Jim Fischer and Jenny Mosbacher in Oregon's Willamette Valley. The producer name 'Fossil' pays homage to ancient marine sedimentary fossils found at Silvershot Vineyard, while 'Fawn' represents the wild deer that inhabit the regional oak savannas. The 'Do Nothing' bottling is sourced from six organically farmed vineyards across the Willamette Valley with vine ages spanning up to nearly five decades.

## Interesting facts

- The name 'Do Nothing' refers to sealing intact grape clusters in bins for a month without any human intervention.
- Label features hand-inked anatomical and floral artwork created by Portland artist Brian Crabaugh.
- Combines both red and white grapes co-fermented whole-cluster under carbon dioxide.

## Food pairing

As a lively, chillable red co-ferment with bright acidity and low tannins, this wine performs exceptionally well alongside light poultry, pork, charcuterie, and dishes featuring tart fruit accents.

## Wine making process

Crafted via 100% whole-cluster carbonic maceration. Intact bunches of both red and white grape varieties are sealed in fermentation bins for four weeks without any manual punch-downs or intervention. Fermentation is spontaneous using native yeasts. After four weeks, the fruit is pressed off intact bunches and completes fermentation over five months in cold cellar stainless steel tanks and neutral oak barrels. Bottled unfined and unfiltered with minimal added sulfur dioxide.
