## Food pairing

The wine's medium+ body and fine, silky tannins complement the richness of red meats and game birds, while its bright acidity cuts through fattiness. Herbal notes in the wine bridge well with dishes featuring herbs like rosemary and sage, and the fruit profile harmonizes with fruit-based sauces.

## Wine making process

The Dog Point Pinot Noir 2022 is crafted using 100% Pinot Noir grapes sourced from the estate's organic vineyards. The fruit is hand-picked and hand-sorted. Approximately 25% of the grapes undergo whole bunch fermentation. Fermentation is carried out in small, open-top stainless steel fermenters using indigenous yeasts, without pumping. Following fermentation, the wine is aged for around 18 months in French oak barrels, with approximately 30% of these being new oak.
