## About this wine

Dogma is the premium line of the historic Chilean estate Viña Aromo, located in the heart of the Maule Valley. Established in 1922, Viña Aromo has over a century of winemaking history. In the early 2000s, Chief Winemaker Jimena Egaña teamed up with the Henríquez family to design the Dogma portfolio, aiming to defy standard boundaries and create premium, unconventional blends. Viña Aromo was a pioneer in the region, being the first to plant Marselan in the Maule Valley and the first in Chile to commercially release a Marselan-Carmenère blend.

## Food pairing

This full-bodied red wine with medium-plus to high tannins and pronounced intensity requires rich, flavorful dishes. High-protein and high-fat foods like marbled steaks and lamb help bind the tannins, making the wine feel smoother, while the wine's fresh acidity cuts through the richness of the meat and strong cheeses.

## Wine making process

The grapes are 100% hand-harvested from estate-owned plots in the Maule Valley, such as El Pilar and Santa Margarita, which feature deep alluvial soils and massive diurnal temperature shifts. After a cold soak maceration (5 days for Marselan, 3 days for Carmenère), fermentation takes place in stainless steel tanks using selected yeast strains rich in polysaccharides to round out tannins. Following post-fermentation maceration, 100% of the malolactic fermentation occurs in contact with wood. The wine is then aged for 12 months in a combination of 60% French and 40% American oak barrels.
