## About this wine

Created in 2014, '100% Cotton' was the debut wine from Pierre Cotton after reclaiming a single hectare of Côte de Brouilly from his family's historic estate in Odénas. Pierre was later joined by agronomist Marine Bonnet, forming Domaine Bonnet-Cotton. The parcel sits on a rare geological formation known locally as 'corne verte', a mixture of pink granite and blue diorite rock. Their farming emphasizes organic practices, agroforestry, and biodiversity.

## Interesting facts

- Originally trained as a motorcycle mechanic, founder Pierre Cotton transitioned to winemaking at age 20.
- The vines grow on 'corne verte', a rare combination of pink granite and blue diorite rock found in Beaujolais.
- Aging takes place in repurposed century-old oak foudres that were originally manufactured for brewing beer.
- The artwork for the iconic bottle label was created by Fleurie-based graphic artist Romain Renoux.

## Food pairing

The lively acidity and low tannin profile of this Beaujolais Cru allow it to cut through rich meats and earthy dishes without overpowering subtle flavors. Bright red fruit notes complement roasted poultry, pork, and earthy mushrooms, while refreshing acidity cuts through the richness of charcuterie and soft cheeses.

## Wine making process

The wine is crafted from 65 to 80-year-old Gamay vines harvested entirely by hand. Vinification involves whole-cluster carbonic maceration in concrete tanks utilizing spontaneous fermentation with indigenous yeasts. The wine ages for 8 to 9 months in century-old neutral oak foudres and neutral barrels without fining, filtration, or sulfur added during fermentation.
