## About this wine

Domaine Dard et Ribo was founded in 1983 by René-Jean Dard and François Ribo in Mercurol. Iconic pioneers in the natural wine movement, they have championed minimal-intervention, zero-sulfur winemaking in the Northern Rhône for decades. Departing from the dense and heavily extracted styles historically common to the region, Dard et Ribo celebrate Syrah for its brightness, digestibility, and pure aromatic pleasure. 'C'est le Printemps' translates to 'It is Spring!', crafted as a joyful homage to the arrival of spring.

## Interesting facts

- Translates to 'It is Spring!', created as an early-released homage to fresh young Syrah.
- Dard et Ribo are legendary natural wine pioneers who began zero-sulfur vinification in 1983.
- Sealed with a black synthetic Nomacorc to ensure complete protection against cork taint.

## Food pairing

This vibrant, light-to-medium-bodied natural Syrah features bright acidity and soft, silky tannins, making it remarkably versatile at the table. It shines alongside charcuterie, roasted poultry, tender lamb, and earth-driven mushroom dishes without overbearing delicate flavors.

## Wine making process

Sourced from old Syrah vines up to 50 years old planted across granite sand, clay-limestone, and gravel plateaus in Mercurol, Larnage, and Crozes-Hermitage. Harvested manually, the grapes undergo spontaneous whole-cluster fermentation using indigenous yeasts without sulfur additions or heavy extraction. The wine ages briefly for 4 to 5 months in neutral vats and older oak casks before being bottled early in spring, unfined and unfiltered, under a black synthetic cork to prevent cork taint.
