## About this wine

Domaine de Colette was founded in 1953 by René Gauthier and takes its name from one of its prized vineyard plots, where Gamay vines are over 80 years old. Located in Lantignié overlooking the Saône Valley, the estate is now operated by René's son, Jacky Gauthier, and grandson, Pierre-Alexandre. The family focuses on low-intervention viticulture across hillside vineyards planted on distinctive pink granite soils.

## Interesting facts

- The estate is named after 'Colette', a historical vineyard plot featuring Gamay vines over 80 years old.
- On clear days, the high-elevation vineyards offer views across the Saône Valley to Mont Blanc.
- Current winemaker Jacky Gauthier began studying oenology at just 17 years old before taking over the estate.

## Food pairing

The elevated acidity and smooth, gentle tannins of old-vine Gamay complement light meats, delicate poultry, and earthy dishes like wild mushrooms while cutting gracefully through cream and soft cheeses.

## Wine making process

Harvesting is completed manually with strict sorting. The grapes undergo gravity-fed whole-cluster vatting followed by traditional semi-carbonic maceration for 7 to 15 days under controlled temperatures. After gentle pneumatic pressing, the wine is aged for 6 to 10 months in neutral concrete vats and 300-liter neutral French oak barrels before minimal filtration.
