## About this wine

Domaine de la Patience is located in the Languedoc near the iconic Pont du Gard between Avignon and Nîmes. Managed by owner and winemaker Christophe Aguilar, who took over the family estate in 1998, the domain transitioned entirely to certified organic farming in 2007. The estate takes its unique name from 'La Patience', an aromatic wild herb that grows natively throughout the family vineyard plots.

## Interesting facts

- The estate is named after 'La Patience', a wild Mediterranean herb native to the vineyard soils.
- Owner Christophe Aguilar converted the family estate to 100% certified organic viticulture in 2007.
- The 2023 vintage earned Gold Medals at both the Challenge Millésime Bio 2024 and Concours des Vins Jeunes Agriculteurs.

## Food pairing

This crisp, dry rosé pairs exceptionally well with Mediterranean dishes, light proteins, fresh cheeses, and seafood. Its bright acidity cuts through rich goat cheese and charcuterie while enhancing the natural sweetness of grilled fish and shellfish.

## Wine making process

Harvested from organic vines grown on ancient sandstone terraces and rolled alluvial pebbles, the grapes undergo direct pneumatic pressing upon destemming. Cold settling is followed by temperature-controlled fermentation in concrete and stainless steel vats utilizing indigenous and neutral yeasts. The wine ages in tank prior to bottling in early spring with minimal sulfites and vegan fining.
