## About this wine

Founded in 1953 by Roger Martin with 14 hectares of Savagnin at the lieu-dit La Pinte à la Capitaine, Domaine de la Pinte has grown into an iconic Jura estate. Pierre Martin converted the domain to organic viticulture in 1999 and full biodynamic farming in 2009. Today, Vincent Martin leads the estate alongside cellar master Emmanuelle. La Capitaine originates from a single parcel co-planted with Jura historic red grape varieties on Triassic red marl soils between Arbois and Pupillin.

## Interesting facts

- Pioneered sustainable viticulture in Jura, converting to organic farming in 1999 and biodynamics in 2009.
- Grown on rare Triassic red marl soil at 400 meters elevation between Arbois and Pupillin.
- A co-planted and co-fermented blend of Pinot Noir, Poulsard, and Trousseau from a single historic parcel.

## Food pairing

The bright acidity, delicate tannins, and vibrant red fruit profile of this Jura red blend complement lean meats, poultry, and cured meats without overpowering them. Fine tannic structure cuts through duck fat and rich charcuterie, while refreshing acidity pairs naturally with regional hard cheeses.

## Wine making process

The grapes—Pinot Noir, Poulsard, and Trousseau—are hand-harvested from the La Capitaine parcel and completely destemmed. A three-week skin maceration with light pump-overs allows for delicate extraction of color and fine tannins. Spontaneous fermentation occurs with indigenous yeasts, followed by full malolactic fermentation. The wine is aged for 18 months in large oak foudres and lightly filtered over silica clay prior to bottling with minimal added sulfur.
