## About this wine

Domaine de la Touraize traces its viticultural heritage in Arbois back to 1704 across eight generations. Run by André-Jean and Héléana Morin, the estate transitioned from selling fruit to local cooperatives to estate-bottling in 2009. Certified organic and Demeter biodynamic, the domaine farms 30 to 45-year-old Chardonnay vines grown on silty and blue marl over limestone subsoils in the Les Moulins and En Arce parcels near Arbois. The warm 2022 vintage yielded optimally ripe fruit, allowing the wine to be bottled with zero added dosage.

## Interesting facts

- Domaine de la Touraize has grown grapes in Arbois for over 300 years across eight generations.
- Winemaker André-Jean Morin is one of four traditional carriers of 'Le Biou', a 90 kg grape bouquet blessed annually in Arbois.
- This zero dosage sparkling wine undergoes up to 30 months of lees aging before manual riddling on wooden pupitres.

## Food pairing

The high acidity, fine mousse, and bone-dry profile of this zero dosage Crémant cut through rich or creamy textures while complementing delicate raw seafood and savory appetizers without overpowering them.

## Wine making process

Hand-harvested in small 300 kg crates, grapes undergo whole-cluster pneumatic pressing and cold gravity settling at 6°C. Spontaneous primary fermentation occurs with indigenous yeasts in stainless steel vats and neutral wooden barrels, followed by complete natural malolactic fermentation without chaptalization or enological inputs. The base wine rests on fine lees for 8 to 12 months before secondary fermentation in bottle. Aged on laths for up to 30 months with manual riddling, the wine is disgorged without any dosage.
