## About this wine

Domaine de Trévallon was created in 1973 by Éloi Dürrbach in the Alpilles region of Provence on land purchased by his father, sculptor René Dürrbach. Éloi made the bold decision to plant equal parts Cabernet Sauvignon and Syrah on stony northern slopes. When local appellation regulations mandated a maximum of 20% Cabernet Sauvignon, Dürrbach chose to accept Vin de Pays / IGP status rather than compromise his blend. Today, his children Ostiane and Antoine maintain the estate's iconic low-intervention legacy.

## Interesting facts

- The estate voluntarily accepted downgrade to IGP status rather than alter its 50/50 Cabernet-Syrah blend to comply with AOC rules.
- René Dürrbach, father of founder Éloi, was a noted sculptor and painter who was a close friend of Pablo Picasso.
- Despite extreme drought and heat in 2022, northern limestone exposures maintained fresh acidity and kept ABV at 13.0%.

## Food pairing

The robust tannins, firm structure, and intense dark fruit concentration of this Cabernet Sauvignon and Syrah blend require high-protein, savory dishes such as game or roasted lamb. Natural acidity and savory garrigue notes align exceptionally well with wild mushrooms and truffle dishes, cutting through rich textures.

## Wine making process

Farmed organically on stony limestone and clay soils with a cool northern exposure. Whole-cluster fermentation with natural yeasts and no sulfur added during vinification. Aged for 24 months in large oak foudres, with varietals aged separately for the first year. Fined with fresh egg whites and bottled unfiltered.
