## About this wine

Domaine des Chaumes is a generational family estate located in Maligny, within the northernmost portion of the Chablis appellation on the right bank of the Serein river. Winemaker Romain Poullet represents the third generation of growers in his family. After completing formal viticultural training at the Lycée Viticole in Beaune, Romain founded his own domain in 2000. In 2014, he and his wife Céline Poullet took full control of the family property, managing and modernizing the estate's 11 hectares of vineyards. The estate is fully certified HVE Level 3 (Haute Valeur Environnementale), representing the highest state-sanctioned French environmental standard for sustainable farming.

## Interesting facts

- Domaine des Chaumes is run by Romain Poullet, a third-generation winemaker who established his own domain in 2000.
- Unlike many entry-level Chablis wines, this cuvée is aged for an extended 15 months on its fine lees for added complexity.
- The estate is fully certified HVE Level 3, representing the highest level of France's environmental certification.

## Food pairing

The high acidity and distinct saline minerality of this Chablis cut through rich, buttery sauces and complement the delicate sweetness of fresh seafood. The lack of oak ensures it does not overpower subtle flavors, while the extended lees aging provides enough texture to stand up to light poultry and soft cheeses.

## Wine making process

The winemaking process at Domaine des Chaumes focuses on preserving fruit purity and highlighting the unique terroir of Chablis. Grapes undergo traditional gentle pressing followed by temperature-controlled alcoholic fermentation entirely in stainless steel tanks (cuve inox). To protect the native freshness of the Chardonnay, the wine avoids any oak contact. Uniquely for an entry-level Chablis, the wine is matured for an extended 15 months on its fine lees in stainless steel tanks prior to final filtration and bottling at the estate in Maligny. This extended sur-lie aging introduces a creamy yeast complexity and roundness to balance the intense mineral tension.
