## About this wine

Domaine des Fables was founded in 2019 by François Gilles in Serrières-en-Chautagne, Savoie. Working organically and biodynamically across 4.5 hectares surrounded by forests and streams, Gilles reimagines local grapes with minimal cellar intervention. The label artwork for Poison Ivy reflects Gilles' former career as a graphic designer before he transitioned to natural winemaking in Alpine France.

## Interesting facts

- Winemaker François Gilles worked as a professional graphic designer before starting Domaine des Fables in 2019.
- The wine's artwork pays homage to the character Poison Ivy from the Batman comic universe.
- Unusually for Jacquère, half of the grapes undergo 15-30 days of skin contact for enhanced texture and depth.

## Food pairing

The high, taut Alpine acidity and subtle skin-contact texture cut through rich mountain cheeses like Fondue and Raclette while pairing beautifully with fresh river fish and poultry.

## Wine making process

Harvested entirely by hand from 25-year-old Jacquère vines planted on sandstone molasse and limestone scree slopes. In the winery, 50% of the grapes undergo 15 to 30 days of whole-bunch skin maceration before being blended with direct press juice. Fermentation relies on native yeasts, followed by aging on fine lees in neutral oak demi-muids following lunar cycles. Bottled unfined and unfiltered with minimal sulfur.
