## About this wine

Domaine des Fauvettes is an artisanal micro-domaine founded by Maryse Chatelin in Uchizy, located within the Mâconnais region of Burgundy. Chatelin created the domaine after working alongside her husband, renowned natural winemaker Alexandre Jouveaux. L'Embellie is produced from a single parcel of 60-year-old Chardonnay vines grown on pure limestone and white marl soils. Though situated within the Viré-Clessé area, the wine is intentionally declassified to Vin de France to grant full freedom over viticultural and cellar decisions.

## Interesting facts

- Intentionally declassified from Viré-Clessé to Vin de France for complete winemaking freedom.
- Sourced from 60-year-old vines planted on limestone and white marl at 300 meters elevation.
- Bottled unfined, unfiltered, and with zero added sulfur for raw mineral purity.

## Food pairing

The high natural acidity and medium-plus body of this natural Mâconnais Chardonnay allow it to cut through rich sauces and fats while complementing delicate seafood, light poultry, and soft cheeses without overwhelming them.

## Wine making process

Vineyards are farmed using organic and biodynamic practices, with grapes harvested manually in small crates. Whole clusters undergo direct pressing before spontaneous fermentation with ambient native yeasts. Vinification and aging take place in large old oak foudres for approximately 12 months, followed by resting in stainless steel. Made with zero added sulfur or additives, the wine is bottled by gravity without fining or filtration.
