## About this wine

Domaine Désiré Petit was established in 1932 by Désiré Petit with just 1.5 hectares in Pupillin, Jura. Today, the estate spans 27 hectares and is managed by third-generation vignerons Anne-Laure and Damien Petit. The 2022 vintage marks a key milestone as the domain achieved full organic certification across its vineyards, which feature Triassic and Jurassic clay-limestone soils.

## Interesting facts

- The 'ouillé' style tops up barrels regularly to preserve freshness instead of creating an oxidative flor.
- 2022 is the first vintage where Domaine Désiré Petit achieved full Ecocert organic certification.
- Under 10% of the domain's total wine production is allocated for export markets.

## Food pairing

The wine's bright acidity and substantial body cut through rich creamy sauces and complement the nutty, savory profile of aged mountain cheeses.

## Wine making process

Harvested entirely by hand in September, the grapes undergo fermentation with native yeasts in 600-liter oak barrels (demi-muids). The wine is crafted in the topped-up (ouillé) non-oxidative style, where barrels are regularly refilled to prevent oxygen exposure. It matures for 18 to 24 months in oak with regular lees stirring (bâtonnage).
