## About this wine

Domaine du Bagnol is one of the historic estates of Cassis, France's first designated AOC created in 1936. Managed by Jean-Louis Genovesi and his son Sébastien, the estate features organic terraced limestone vineyards located just 200 meters from the Mediterranean Sea beneath Cap Canaille. The maritime climate and cooling breezes preserve fresh acidity and impart a distinct coastal salinity to the wine.

## Interesting facts

- Cassis was designated as one of France's very first AOCs in 1936, alongside Châteauneuf-du-Pape and Tavel.
- The vineyards sit in a natural coastal amphitheater just 200 meters from the Mediterranean shoreline.
- Malolactic fermentation is completely blocked to preserve vibrant natural acidity and sea-salt tension.

## Food pairing

The wine's bright coastal acidity and distinctive mineral salinity effortlessly cut through rich seafood fats and elevate fresh shellfish, while soft fruit notes harmonize with Mediterranean herbs.

## Wine making process

Organically farmed grapes are hand-harvested with selective sorting and 100% destemmed. Following a cold skin-contact maceration, fermentation occurs with indigenous yeasts in concrete and stainless steel tanks at 18°C. Malolactic fermentation is completely blocked to preserve crisp acidity. The wine matures on fine lees in temperature-controlled vats with no oak influence before bottling.
