## About this wine

Domaine du Pesquier Gigondas is a red wine from the Southern Rhône Valley, produced by a family estate with a history dating back to 1556. The current winemakers represent the fourth generation of the family. The estate's vineyards are located within the Gigondas appellation, situated on stony plateaus and limestone terraces. The winemaking focus is on producing a single cuvée of Gigondas that reflects the diversity of its terroirs and vine ages.

## Interesting facts

- Estate history dates back to 1556.
- No herbicides or pesticides used since 1997.
- Focus on a single Gigondas cuvée.
- Vineyards are on stony plateaus and limestone terraces.

## Food pairing

The full body and fine tannins of this Gigondas are well-suited to rich, protein-heavy dishes. The wine's inherent fruitiness and savory notes can complement the savory aspects of meats, while its structure can cut through fattier preparations. Spicy elements in food can also be balanced by the wine's intensity.

## Wine making process

Domaine du Pesquier Gigondas is produced using traditional vinification methods. The grapes undergo partial destemming and light crushing, followed by a cold pre-fermentation maceration. Fermentation occurs in temperature-controlled stainless steel tanks with indigenous yeasts, featuring daily delestage and a cuvaison lasting around 35 days. Following fermentation, the wine is aged for 12 to 18 months in large, old wooden vats (foudres), with a deliberate avoidance of new oak. Harvesting is done manually.
