## About this wine

Élodie Jaume is a fifth-generation winemaker whose family has been rooted at Domaine des Chanssaud in Châteauneuf-du-Pape since 1826. After gaining winemaking experience in Oregon, she returned to the Southern Rhône in 2017 to establish her own domain across five hectares of family plots. Grown on deep red clay and rolled pebbles in Orange near the Châteauneuf-du-Pape boundary, this cuvée reflects biodynamic viticulture and meticulous plot management.

## Interesting facts

- The name 'À en perdre le soufre' is a play on the French phrase 'à en perdre le souffle' (breathtaking), swapping breath for sulfur.
- The wine is crafted from 70 to 80-year-old vines located on parcels directly bordering Châteauneuf-du-Pape.
- Winemaker Élodie Jaume represents the 5th generation of a historic Châteauneuf-du-Pape winemaking family.

## Food pairing

The wine's fresh acidity, medium tannins, and vibrant black fruit with peppery undertones complement savory roasted meats, herbs de Provence, and charcuterie while balancing fatty dishes without overpowering delicate spices.

## Wine making process

Matured exclusively in concrete tanks for at least six months, this wine is produced through natural fermentations with native yeasts and gentle 20-to-25-day infusions. The entire process avoids oak intervention, oenological additives, and added sulfites, capturing the pure fruit expression of the old Grenache and Syrah vines.
