## About this wine

Domaine Léon is located in Landreville within the Côte des Bar region of Champagne. Fourth-generation vigneron Clément Robert revitalized the estate in 2019, naming it after his great-grandfather Léon Robert. Prior to Clément taking over at age 25, the family sold all harvested grapes to larger Champagne houses. Under his direction, the domain converted to organic and biodynamic farming, producing focused, small-lot grower Champagnes that highlight specific parcels and zero-dosage winemaking.

## Interesting facts

- Enchevêtrer translates to 'entangled', representing the union of two historical family vineyard parcels.
- Clément Robert revitalized his family estate at age 25, naming it Domaine Léon after his great-grandfather.
- The wine is disgorged manually à la volée with zero dosage to maintain pure Pinot Noir focus.

## Food pairing

The bone-dry profile and high acidity cut through rich seafood fats and creamy soft cheeses, while the vinous structure and body derived from 100% Pinot Noir allow it to pair seamlessly with savory poultry like duck and light pork dishes.

## Wine making process

Crafted from 100% Pinot Noir grown on 35-year-old vines in two specific parcels: 'La Chevêtrée' and 'La Grande Côte'. Grapes are hand-harvested and fermented with indigenous yeasts. Vinification takes place partly in 500L oak casks and used oak barriques for 10 months, and partly in stainless steel for 4 months. The wine undergoes full malolactic fermentation and is aged on lees in bottle for 14–20 months. Disgorged manually à la volée in December 2023 with zero dosage (Brut Nature).
