## About this wine

Domaine Les Bottes Rouges was established in 2012 by Jean-Baptiste Menigoz, a former special education teacher who trained under Jura icon Stéphane Tissot. Joined in 2014 by Florien Kleine Snuverink, the boutique estate spans 7 hectares in Abergement-le-Petit. Sourced from high-limestone scree and Triassic clays in Arbois, Gibus is recognized as the estate's most structured red wine. The name Les Bottes Rouges is a homage to the French punk rock group Les Wampas.

## Interesting facts

- The estate name Les Bottes Rouges is named in homage to the French punk rock group Les Wampas.
- Founder Jean-Baptiste Menigoz worked as a special education teacher before training with Jura legend Stéphane Tissot.
- Gibus is aged entirely in stainless steel with zero oak usage to maintain pure fruit expression and mineral drive.

## Food pairing

Trousseau's lively acidity, fine tannins, and vibrant red fruit complement game birds, pork charcuterie, and river fish. Its acidity cuts through rich fats while harmonizing with the nutty depth of aged regional Comté cheese.

## Wine making process

Hand-harvested Trousseau grapes are manually destemmed before undergoing a 3-week maceration in stainless steel tanks using 100% indigenous yeasts. The wine is aged for 12 months entirely in stainless steel tanks to preserve fruit freshness and mineral precision without oak influence. Bottled unfined and unfiltered, with only a minimal addition of sulfur after malolactic fermentation.
