## About this wine

Domaine Les Dolomies was established in 2008 by Céline Gormally in Passenans, later joined by her husband Steve in 2016. The estate derives its name from dolomies, the magnesium-rich limestone bedrock found throughout the region. The Croix Sarrant cuvée originates from a tiny 0.3-hectare parcel of 20-year-old Savagnin vines planted on ochre Lias marl in Château-Chalon. Since 2017, the estate has purposefully declassified its entire production to Vin de France to retain complete freedom in crafting natural wines.

## Wine making process

Practicing certified organic and biodynamic viticulture, the estate cultivates vineyard soils exclusively using horses. Grapes are hand-harvested with strict sorting. In the cellar, the wine is fermented spontaneously with native yeasts in old oak barrels without any additives. Crafted in an ouillé (topped-up) non-oxidative style, it ages for 12 to 24 months in neutral oak. The bottled wine is unfiltered, unfined, and made with zero added sulfur dioxide.
