## About this wine

Domaine Mada was founded by Edouard Adam and Pauline Bousquet in the Languedoc region of Southern France. The estate name 'Mada' is a clever palindrome of Edouard's surname. Located near Gignac and Nizas, the domaine manages small parcels grown on schist soils with strict organic and biodynamic farming. The 'Wu' cuvée stands out as an intriguing Blanc de Noirs crafted entirely from red Cinsault grapes, offering a fresh and energetic profile unique to the region.

## Interesting facts

- The cuvée name 'Wu' is an explicit homage to the legendary American hip-hop group Wu-Tang Clan.
- Domaine Mada is a clever palindrome created by reversing founder Edouard Adam's surname.
- Although made from 100% red Cinsault grapes, direct pressing produces a pale white Blanc de Noirs.
- Farmed organically and biodynamically on schist soils in the Languedoc without added sulfites.

## Food pairing

This delicate and energetic Blanc de Noirs features bright acidity and a clean mineral drive, making it ideal for lighter proteins, fresh cheeses, and raw shellfish. High acidity cuts cleanly through light oils and fats while delicate citrus and floral accents harmonize with fresh herbs and seafood without masking subtle flavors.

## Wine making process

Grapes are hand-harvested from old-vine Cinsault parcels grown on schist. The dark-skinned grapes undergo immediate direct pressing to avoid color extraction, yielding a clear white juice. Fermentation occurs spontaneously using only native yeasts in neutral oak demi-muid barrels without any fining, filtration, or added enological inputs. The wine is aged for eight months before bottling with zero added sulfur dioxide.
