## About this wine

Domaine Milan, located in Saint-Rémy-de-Provence, was established in 1956 by Robert Milan and taken over by his son Henri in 1986. Henri eliminated synthetic chemicals and shifted to natural winemaking in 2000, inspired by soil microbiologist Claude Bourguignon. Today, third-generation vigneron Théophile Milan leads production alongside his wife Natalie. The cuvée name Haru features the Japanese kanji for spring, symbolizing a fresh, vibrant wine crafted for immediate pleasure.

## Interesting facts

- The front label features the Japanese kanji character Haru (春), meaning springtime.
- Domaine Milan intentionally stepped outside the AOC system to Vin de France to retain complete freedom in crafting their wines.
- Domaine Milan is a member of the Triple A collective, recognizing winemakers as Farmers, Artisans, and Artists.

## Food pairing

The lively acidity and soft, low tannins resulting from carbonic maceration make this wine remarkably adaptable. It effortlessly cuts through rich meats like duck or lamb while harmonizing gracefully with herbaceous Mediterranean dishes and roasted vegetables.

## Wine making process

Grapes are hand-harvested from 20-year-old vines grown on clay-limestone soil. Mourvèdre undergoes full carbonic maceration, while Grenache and Syrah undergo whole-bunch semi-carbonic maceration in concrete vats using indigenous yeasts. The wine ages briefly in concrete tanks to retain pure red fruit character and is bottled unfiltered with minimal sulfur additions.
