## About this wine

Domaine Romain Le Bars is an artisanal natural wine estate located in Tavel, in the southern Rhône Valley of France. Founded in 2018 by Romain Le Bars, who trained for seven years under natural wine icon Éric Pfifferling at Domaine de l'Anglore, the estate encompasses 11 hectares of organically farmed vineyards. The estate focuses on crafting deeply colored, macerated Tavel rosés using old vines grown across rounded quartzite pebbles, limestone, and alluvial sand terroirs.

## Interesting facts

- Founder Romain Le Bars trained for seven years under Éric Pfifferling at Domaine de l'Anglore.
- Tavel is France's premier appellation dedicated exclusively to the production of rosé wines.
- The wine incorporates three classic Tavel terroirs: rounded pebbles, alluvial sands, and limestone scree.

## Food pairing

This structured, deeply colored rosé has the weight, concentration, and subtle grip closer to a light red wine. Its high acid balance and rich red-fruit intensity allow it to match well with savory meats, charred vegetables, and moderately spiced exotic dishes.

## Wine making process

The grapes are hand-harvested early in the morning to retain acid balance. Vinification combines whole-cluster carbonic maceration for approximately eight days with direct pressing for the remaining fruit. Spontaneous fermentation occurs with indigenous yeasts and no additives. The wine ages for six to nine months split between neutral oak barrels, demi-muids, and concrete or stainless steel tanks before being bottled unfined and unfiltered with minimal sulfur additions.
