While Bouzy is historically world-renowned for Pinot Noir, winemaker Jean-François Clouet created the Dream Vintage collection to celebrate outstanding years using 100% Grand Cru Chardonnay. The collection pays tribute to iconic design eras, drawing inspiration from classic 1950s Cadillac color palettes.

## Food pairing

The high acidity and fine mousse of this Blanc de Blancs effortlessly slice through rich, delicate fats like butter sauces and sweet seafood, while lees aging provides a subtle autolytic character that harmonizes with aged hard cheeses and nuts.

## Wine making process

Harvested from old-vine Chardonnay plots in Grand Cru chalk soils. Primary fermentation takes place in temperature-controlled stainless steel vats to highlight fresh fruit expression and natural chalk minerality. Malolactic fermentation is fully completed to balance high natural acidity. The wine undergoes secondary fermentation in bottle using the traditional Champagne method and ages on its lees for 36 months before disgorgement. The final dosage is set at 6 grams per liter (Brut).
