## About this wine

Devium Wine was founded by winemaker Keith Johnson to showcase raw, energetic, non-interventionist expressions of Washington State terroir. Based in the Walla Walla Valley, Devium avoids heavy oak and high extraction in favor of minimalist winemaking techniques. The Dwelley Vineyard, situated in the foothills of the Blue Mountains, yields rare Pacific Northwest Dolcetto. The 2025 vintage marks the return of this single-vineyard bottling following crop recovery after a severe frost event in early 2024.

## Interesting facts

- Dolcetto is exceptionally rare in the Pacific Northwest, with Devium crafting a 100% carbonic maceration bottling.
- The 2025 release marks the return of a 100% single-vineyard bottling after a severe 2024 freeze forced a co-ferment blend.
- Made without any added sulfites, unfined, unfiltered, and foot-trodden in whole bunches.

## Food pairing

The lively acidity and supple tannins of carbonic Dolcetto complement high-fat cured meats, roasted pork, and light tomato-based dishes without overpowering them. Serving it with a light chill accentuates its fresh red fruit profile and floral aromatics, making it versatile across casual picnic fare and savory wood-fired pizzas.

## Wine making process

Crafted using 100% whole-cluster carbonic maceration. Sealed whole bunches ferment internally under a carbon dioxide environment before foot-treading to release remaining juice and gentle pressing. The wine is aged briefly in neutral oak casks and stainless steel vessels to maintain fruit purity. Bottled unfined and unfiltered with zero added sulfites.
