## About this wine

Domaine Sérol is a family-owned estate situated in Renaison in the Côte Roannaise, a high-altitude outpost at the eastern edge of the Loire Valley near the source of the Loire River. Led by Stéphane and Carine Sérol, the estate practices organic and biodynamic viticulture, focusing on high-density plantings of the local Gamay Saint-Romain clone on granitic slopes. The domaine also collaborates on vineyard parcels with the famed Michelin-starred Troisgros family.

## Interesting facts

- The estate co-owns specific vineyard parcels with the famous Michelin three-starred Troisgros family.
- Vineyards sit at high elevations up to 530 meters on ancient granite bedrock in the Massif Central foothills.
- Bottled in eco-designed lightweight 395g glass bottles using natural cork and hand-waxed tops.

## Food pairing

The vibrant acidity and soft, granular tannins of high-altitude Gamay make it exceptionally versatile. It cuts through fat in charcuterie and creamy potato dishes while complementing tender roasted poultry and pork.

## Wine making process

Grapes are hand-picked into small crates from high-altitude granitic vineyard plots and manually sorted. Vinification occurs in gravity-fed concrete tanks using indigenous yeasts with 20% to 30% whole bunch inclusion. Maceration lasts 15 to 20 days under temperature control. The wine ages for 11 months in concrete tanks without oak contact before gentle filtration and estate bottling.
