## About this wine

Raúl Moreno Yagüe, a former award-winning sommelier and captain of Spain's blind tasting team, returned to Andalusia after years in Australia to spearhead the revival of unfortified, terroir-driven dry Palomino wines (vinos de pasto). El Propósito is sourced from centenary goblet-trained vines in Pago Miraflores Alto near Sanlúcar de Barrameda, grown on pure chalk-rich Albariza soils overlooking the Atlantic Ocean.

## Interesting facts

- Created by a former captain of Spain's national blind tasting team turned natural winemaker.
- Sourced from centenary vines aged 60 to 100 years planted on pure chalky albariza soil.
- Combines Georgian-style whole-bunch skin contact with traditional Sanlúcar flor yeast aging.
- Ages under a rare Saccharomyces Beticus flor strain in large-format chestnut barrels.

## Food pairing

The intense Atlantic salinity, electric acidity, and flor yeast complexity cut effortlessly through rich fats, deep-fried coatings, and intense cured flavors while harmonizing with savory umami compounds.

## Wine making process

Hand-harvested grapes undergo 100% whole-bunch spontaneous fermentation with a 7-day skin maceration in open vats and clay tinajas. Pressing occurs in a vertical basket press before finishing fermentation inside 1,000-liter old Manzanilla chestnut and oak casks. The wine ages biologically under a veil of Saccharomyces Beticus flor yeast for 10 to 11 months before settling in stainless steel. It is bottled unfined and unfiltered with minimal sulfur additions.
