## About this wine

Émilie Mutombo is a Brussels-born winemaker of Congolese heritage operating out of Bonastre in Baix Penedès, Catalonia. After working alongside natural wine icons Partida Creus, she launched her micro-winery in 2020. Omnia, meaning 'everything' in Latin, is a creative cellar blend that changes with each vintage, capturing the fluid essence of minimal-intervention winemaking in Mediterranean Catalonia.

## Food pairing

This energetic natural rosé combines bright acidity with subtle red fruit and Mediterranean herbal notes. It excels alongside tapas, tomato-driven dishes, grilled seafood, and fresh goat cheeses, where its lively acidity cuts through light richness without swamping delicate flavors.

## Wine making process

Organically farmed vines ranging from 15 to 50 years old are planted on clay and limestone soils at 182 meters elevation. Whole bunches of Merlot and Bobal are infused into direct-pressed juice of Macabeo and Parellada. Spontaneous co-fermentation takes place with indigenous yeasts. The wine is aged in oak barrels and bottled un-fined, un-filtered, and with zero added sulfur dioxide.
