## About this wine

Domaine Lindenlaub has been farming vines in the village of Dorlisheim in Northern Alsace since 1759. Christophe Lindenlaub took over the estate alongside his father Jacques in 1999 and converted all 10 hectares to organic viticulture, earning certification in 2012. In 2014, Christophe fully transitioned to additive-free, natural winemaking. The 'En Équilibre' cuvée highlights Riesling grown on south and southeast-facing clay, limestone, and sandstone soils.

## Interesting facts

- Domaine Lindenlaub has been family-owned and farming in the Alsatian village of Dorlisheim since 1759.
- Converted to certified organic farming in 2012 and fully natural, sulfur-free winemaking in 2014.
- Features a brief 24-hour skin contact maceration that gives this Riesling amber hues and subtle tannic grip.

## Food pairing

The brief 24-hour skin contact provides a delicate tannic texture and phenolic grip that stands up well to pork, duck, and rich poultry, while its vibrant Alsatian acidity cuts through rich textures and aligns perfectly with citrus glazes, earthy vegetables, and washed-rind cheeses.

## Wine making process

The grapes undergo a 24-hour pre-fermentative cold soak skin-contact maceration, which imparts subtle amber hues and phenolic texture. Fermentation occurs spontaneously with indigenous yeasts in stainless steel tanks without temperature control adjustments or chemical intervention. The wine is aged on its fine lees for 8 months in stainless steel before bottling without fining, filtration, or added sulfur dioxide.
