## Wine making process

The production of Encantado Branco begins with pneumatic pressing of the grapes at low temperatures. Following static decantation, the Alvarinho, Arinto, and Viognier varieties are fermented separately in stainless steel tanks. A portion of the wine is aged in French oak barrels, with 20% new and 80% used. After fermentation, the wine is aged for four months at low temperatures on its lees, with light battonage, before bottling. Ravasqueira also emphasizes sustainability and environmental responsibility in its practices.
