## About this wine

Domaine Lindenlaub is situated in Dorlisheim in northern Alsace, with a winegrowing lineage in the region dating back to 1759. Christophe Lindenlaub took over operations alongside his father in 1999, converting the estate to certified organic farming in 2012 and natural, additive-free winemaking in 2014. The cuvée 'Entre Nous' translates to 'Between Us', created as an approachable, convivial bottle designed to reflect the pure terroir of schist, clay, and limestone soils across their Alsatian vineyards.

## Interesting facts

- The Lindenlaub family has been making wine in the Alsatian village of Dorlisheim since 1759.
- Each bottle label features a hand-painted Zen ENSO circle, symbolizing balance and natural simplicity.
- The wine is bottled unfined and unfiltered with minimal added sulfites (under 10 mg/L).

## Food pairing

The lively acidity and saline mineral spine of this natural white wine cut through delicate seafood fats and soft goat cheese while refreshing the palate. Subtle citrus nuances align nicely with light herbal and vinegary summer dishes without overpowering delicate protein flavors.

## Wine making process

Grapes are harvested 100% manually from organic and biodynamic plots of approximately 20-year-old vines. Upon entering the cellar, the fruit undergoes direct pressing followed by spontaneous fermentation driven entirely by indigenous yeasts in stainless steel tanks. The wine ages on fine lees (sur lie) for 9 to 12 months without temperature manipulation, fining, or filtration. Bottling occurs with minimal to zero added sulfur dioxide.
