## About this wine

Champagne Éphémère is a collaborative micro-négociant project established in 2014 by the highly acclaimed grower-winemaker Frédéric Savart and Philippe Drémont of Drémont Père & Fils. Operating as an experimental laboratory of Champagne terroirs, the project eschews the traditional estate model of maintaining a consistent house style. Instead, Savart acts as the stylistic director, selecting exceptional, often underappreciated single plots across the region to create unique, numbered releases. Once a specific cuvée is sold out, it is never produced again. The Éphémère 016 Coeur de Rosé is a highly limited, allocated release that has found a home on the wine lists of some of the world's most prestigious Michelin-starred restaurants.

## Interesting facts

- This wine is a collaboration between cult grower Frédéric Savart and distributor Drémont Père & Fils.
- Each Éphémère release is a unique, one-time-only numbered batch that is never recreated once sold out.
- Unlike Savart's estate wines, this cuvée undergoes full malolactic fermentation to build a rounder mid-palate.

## Food pairing

This Champagne is built for the table, combining high acidity and a mineral backbone with the structural weight of 14% still red Pinot Noir. The vinous texture and five years of lees aging allow it to cut through rich, fatty meats like duck and lamb, while its vibrant freshness cleanses the palate when paired with creamy sauces or triple-cream cheeses.

## Wine making process

This sparkling rosé is a blend of 70% Pinot Noir and 30% Chardonnay, primarily sourced from the 2016 harvest (85%) with reserve wines from 2015 (15%). The blend incorporates 14% still red Pinot Noir sourced from Grand Cru Verzenay and Premier Cru Sermiers. Fermentation takes place in temperature-controlled stainless steel tanks and neutral oak barrels. Unlike Frédéric Savart's estate-bottled Champagnes, this cuvèe undergoes full malolactic fermentation to develop a rounder, more integrated mid-palate structure. The wine was bottled in July 2017 and aged on its lees for five years before disgorgement in July 2022. It is finished as an Extra Brut with a very low dosage of 2 g/L using Rectified Concentrated Grape Must (MCR).
