## About this wine

Es D'Aqui Cinsauriel 2021 is a Vin de France red wine from the Languedoc-Roussillon region, produced by Jean-Louis Pinto under his Es D'Aqui project. The project's name, meaning 'this is from here' in Catalan, underscores Pinto's dedication to terroir. He sources grapes from selected organic and biodynamic vineyards across the Languedoc, allowing his intuitive winemaking approach to express the true potential of each vintage without adhering to appellation regulations. The grapes for this specific wine come from schist soils located north of Saint Chinian and within the Saint Chinian area.

## Wine making process

The Es D'Aqui Cinsauriel 2021 undergoes spontaneous fermentation with 28 days of whole-bunch maceration. Following pressing, the wine is transferred to sandstone eggs and steel tanks for aging. This approach emphasizes natural yeast activity and minimal intervention, aiming to capture the essence of the Cinsault grape and its origin. The use of sandstone eggs for aging allows for a gentle evolution of the wine, preserving its fruit character while developing texture.
