## About this wine

The Paul Cluver Estate Chardonnay 2021 is a single-varietal Chardonnay from the Elgin region of the Western Cape, South Africa. Produced by Paul Cluver Wines, a family-owned estate with a history dating back to 1896, the wine reflects the cool-climate terroir of Elgin. The estate is a pioneer of the region and is situated within the Kogelberg Biosphere, with a significant portion of its land reserved for conservation. The 2021 vintage was characterized by favorable growing conditions, including a cool winter and moderate temperatures throughout the growing season.

## Interesting facts

- Half of the Cluver estate is dedicated to conservation within a UNESCO World Heritage site.
- Vines range in age from 4 to 34 years, planted on elevated shale and clay soils.
- Wild fermentation is employed, allowing indigenous yeasts to contribute to the wine's character.
- The wine is aged on lees for nine months, adding texture and complexity.

## Food pairing

The wine's bright acidity cuts through the richness of creamy sauces and fatty proteins, while its fruit and subtle oak notes complement dishes with poultry, pork, and seafood. The minerality can also enhance the brininess of shellfish.

## Wine making process

The winemaking process for the Paul Cluver Estate Chardonnay 2021 begins with grapes being cold-stored overnight before whole-bunch pressing. Fermentation is carried out using wild yeasts in a combination of French oak barrels (26% new, 26% second fill, and the rest older), oak vats, and smaller oak barrels. Some components are also tank-fermented. The wine is aged on its lees for nine months. Minimal lees stirring is practiced.
