## About this wine

Axel Domont was a professional WorldTour cyclist who turned to natural winemaking in Savoie following a career-ending crash. Based in Porte-de-Savoie at the foot of Mount Granier, he shares cellar space with winemaker Nicolas Ferrand. Sourced from high-elevation single-parcel slopes above Apremont, Eterlou represents Domont's focused effort to showcase the unadulterated high-altitude expression of native Savoyard grape varieties.

## Interesting facts

- Axel Domont transitioned to natural winemaking after retiring from a career as a WorldTour professional cyclist.
- Eterlou is the traditional Savoyard dialect term for a young male chamois, the mountain goat native to the Alps.
- The wine features a dark label to signal Axel Domont's reserve, single-parcel selection with extended aging.

## Food pairing

High alpine acidity cuts seamlessly through rich, melted mountain cheeses like Beaufort and Raclette while mirroring the vibrant mineral salinity of river trout and fresh oysters.

## Wine making process

Organically and biodynamically farmed on limestone scree terroir, the Jacquère grapes are harvested entirely by hand. Vinification begins with direct whole-cluster pressing followed by spontaneous fermentation driven by wild indigenous yeasts without chaptalization or enological additives. The wine undergoes an extended maturation period in neutral vessels and demi-muids, bottled unfined and unfiltered with minimal sulfur additions.
