## About this wine

Château de Béru is a historic estate owned by the Béru family for over 400 years. After phylloxera destroyed the vineyards in the early 20th century, the estate was replanted in 1987 by Count Éric de Béru. In 2004, his daughter Athénaïs de Béru abandoned a finance career in Paris to take over management, transforming the estate into a pioneer of biodynamic viticulture in Chablis. Under the Famille du Vin initiative, organic natural winemakers release high-terroir wines in modern, eco-friendly formats.

## Interesting facts

- The estate vineyards lie on Kimmeridgian soils filled with 150-million-year-old fossilized oyster shells.
- Athénaïs de Béru left a career in Paris finance to convert her family estate to biodynamic farming.
- At 300 meters elevation, Béru features some of the highest-altitude vineyards in all of Chablis.

## Food pairing

High natural acidity and razor-sharp minerality cut cleanly through rich seafood, delicate white fish, and creamy textures, perfectly complementing raw shellfish salinity.

## Wine making process

Grapes are hand-harvested from high-altitude vineyards featuring Kimmeridgian limestone soils rich in marine fossils. Low-intervention winemaking includes direct pressing at low pressure and spontaneous fermentation using indigenous wild yeasts in stainless steel vats. The wine ages on fine lees without oak influence to maintain natural freshness and terroir purity, bottled without fining or filtration and with minimal added sulfites.
