## Food pairing

## Wine making process

The Musita 'Farah Catarratto Pinot Grigio' is produced using controlled temperature fermentation between 14-16°C with selected yeasts. Following fermentation, the wine undergoes a 4-month aging period in stainless steel tanks on fine lees, with periodic batonnage. It is then aged for at least 2 months in bottle. The Pinot Grigio grapes are harvested in late July/early August, and the Catarratto grapes in mid-September. The winery utilizes modern equipment while adhering to an eco-sustainable vision.
