## About this wine

Founded in 1997 by Ciro Picariello and his wife Rita Guerriero, this estate in Summonte, Irpinia, released its first commercial vintage in 2004. Working high-altitude vineyards between 500 and 650 meters elevation on volcanic soils, Ciro and his family produce benchmark Fiano di Avellino wines celebrated for their purity, tension, and extraordinary cellar longevity.

## Interesting facts

- Ciro Picariello worked full-time as a surveyor before founding the winery with his wife Rita in 1997.
- Harvesting occurs unusually late in late October at high elevations up to 650 meters.
- Aged bottles are frequently compared in blind tastings to Premier or Grand Cru Chablis.

## Food pairing

The wine's bright, piercing acidity and smoky mineral backbone make it a natural match for fresh shellfish, raw seafood, and light poultry dishes, where its vibrant acidity cuts through richness and underscores marine flavors.

## Wine making process

Grapes are hand-harvested late in October and carefully sorted before undergoing a slow pressing, using only the first press fraction. Fermentation takes place spontaneously with indigenous yeasts in temperature-controlled stainless steel tanks without oak influence. The wine ages on its fine lees for 10 to 12 months in stainless steel, followed by several months in bottle before release, remaining unfined and unfiltered with minimal sulfur additions.
