## About this wine

Created by husband-and-wife team Filipa Pato and William Wouters in Bairrada, Portugal, this sparkling Blanc de Blancs showcases native Portuguese grape varieties grown on Jurassic chalky-clay soils. Filipa Pato, named Winemaker of the Year in Portugal in 2020, focuses on minimal-intervention wines that highlight terroir. The 3B designation honors Bairrada, Bical, and Baga, reflecting their commitment to indigenous grapes and the cool maritime influence of Óis do Bairro.

## Interesting facts

- Filipa Pato was the first female winemaker in 30 years to be named Portugal's Winemaker of the Year in 2020.
- The 3B name pays tribute to Bairrada and its star native grape varieties Bical and Baga.
- Harvest takes place in early August to ensure crisp natural acidity without needing sugar dosage.

## Food pairing

The bone-dry Brut Nature style and vibrant high acidity act as an ideal palate cleanser, slicing through fried coatings and creaminess while complementing saline shellfish and rich aged cheeses.

## Wine making process

Hand-picked early in August to preserve natural acidity, the whole-cluster grapes undergo primary fermentation with wild yeasts in temperature-controlled stainless steel tanks. Crafted using the Traditional Method, the wine undergoes secondary bottle fermentation without oak aging and matures on its fine lees for nine months. It is bottled unfiltered as a Brut Nature with zero dosage and minimal added sulfites.
