## Food pairing

The wine's structure and balanced acidity can cut through the richness of dishes like foie gras and creamy sauces. Its complexity and subtle spice notes complement the earthy flavors of truffles and the savory character of mature cheeses.

## Wine making process

The production of Fine Fleur begins with hand-picked Pinot Noir grapes, which are whole bunch pressed. Alcoholic fermentation is conducted at 18°C, followed by malolactic fermentation in temperature-controlled stainless-steel vats. The wine is then aged on laths in traditional cellars for a minimum of 36 months on its lees before dosage. The dosage is typically between 6-9 grams of sugar per liter.
